We’re Keeping a Lid on Brush Box (But Not for Much Longer…)
If you’ve been enjoying our honey over the years, you’ll know that some of our honey harvests are rare in the sense that nature doesn’t deliver on tap every year.
Brush Box honey is one of those honeys! But after a good few years without it, we’re genuinely excited to say: this honey lovers’ favourite is going to be back for your enjoyment soon.
New tubs, new label. Thank you Snap Port Macquarie
Those boxes in the photo? That’s a fresh delivery of 1kg Brush Box lids arriving at the farm so we’ll be able to pack this delicious harvest into 1kg tubs for you.
Donna and the team at Snap Port Macquarie helped us out on the label design (thanks!), matching it beautifully to the colour palette of our other special harvest labels: Yellow Box, Bloodwood, Ironbark and Stringybark. So, welcome back to the family Brush Box!
What does Brush Box honey taste like?
It’s definitely a little different to our other harvests. This harvest is a pale yellow/warm amber colour. And the flavour? There’s a hint of citrus, but also a spice character that’s hard to pin down at first. Not sharp, not peppery, more of a smooth, warm aromatic type of flavour…maybe a mix of citrus and Sambuca, liquorice, or Chinese five spice. But everyone’s palette is different so can’t wait to hear how you describe it when it’s finally on the tasting table at the markets.
About the tree
Brush Box (Lophostemon confertus) is a fairly tall tree with a rough, scaly bark and they tower over us when we’re out in the bush. When it flowers, its small white flowers are a magnet for our bees and they load up good pollen and great nectar, so it really helps keep them healthy too.
When can you get it?
Soon! We’re extracting a different harvest early this week and hope to be able to get our Brush Box harvest into tubs for you for markets and online later in April. It’ll be worth waiting for! And remember, when you buy your honey from us at The Beekeeper, you’re buying it directly from the beekeepers who work with the bees and then package it – no mixing, no imported honey, no honey where you don’t know where it came from.
